Brown top millet, known as dhuthurai in Tamil, is one of the rarest and most nutrient-dense millets available today. Once a forgotten grain, it is now recognised as one of the most fibre-rich millets among all the Siridhanya varieties. Cook it as a rice substitute with dal or curry, prepare a light upma or khichdi, or grind into flour for dosas and rotis. It has a mild, earthy flavour and cooks to a soft, slightly chewy texture. For best results, cook with cold-pressed coconut oil for a clean, neutral flavour that lets the grain shine.
