Kodo millet, known as varagu in Tamil, is one of the oldest cultivated grains in India with over 3,000 years of agricultural history. Small, light, and incredibly versatile, varagu is a naturally gluten-free grain that works as a direct substitute for rice in everyday cooking. How to Use

Varagu rice cooks and behaves very similarly to white rice, making it one of the easiest grains to switch to. Use it to prepare varagu sadam, pongal, upma, khichdi, or idli and dosa batter. It has a mild, slightly earthy flavour and a soft texture when cooked. Soak for 30 minutes before cooking for the best results. Cook in cold-pressed gingelly oil for an authentic South Indian finish.
