Description

Kerala matta rice is the rice that most Kerala households grew up on. Short, plump grains with a reddish brown bran layer, parboiled before milling so the nutrients from the husk soak into the grain rather than being lost. You will also see it sold as rosematta rice, palakkadan matta, or puzhungal arisi in Tamil. Ours is unpolished, with no chemical whitening or artificial ageing. If you want a lighter, softer everyday rice instead, our Thooya Malli rice is the gentler option.

How to cook it

Soak for 30 to 45 minutes, then pressure cook with roughly 1:3 rice to water for four to five whistles. It takes longer than white rice and drinks more water, so do not go easy on either. Matta holds its shape well in kanji, and it is the traditional base for Kerala meals with thoran, avial and fish curry. Finish with a spoon of cold pressed coconut oil for the way this rice is actually eaten at home.

What is Kerala matta rice?

How do I cook matta rice properly?

Soak for 30 to 45 minutes, then pressure cook with about three parts water to one part rice for four to five whistles. It needs more water and more time than white rice. The drain method works too, with plenty of water and the starch poured off at the end.

Is matta rice better than white rice?

It keeps its bran and its parboiled nutrients, so it carries more fibre, iron and B vitamins than polished white rice, and it is more filling. The taste is different though, earthy and firm, so it suits some meals better than others.

Is matta rice good for diabetics?

The bran layer and the parboiling slow digestion compared to polished white rice, which is why matta features in blood sugar friendly diets. It is still rice, so portion size matters. Check with your doctor for advice on your own plan.

Can I use matta rice for idli or dosa batter?

It can be ground, but the batter turns dense and reddish. For soft idlis and crisp dosas, idly rice is the better choice. Keep matta for meals and kanji, where its texture works in your favour.

Why is matta rice red in colour?

The colour comes from the natural bran layer that survives milling. Polished white rice has that same layer removed, which is also where most of the fibre and minerals sit.
